Tuesday Treats: Faulkner's Fallfetti Popcorn


There are so many things that we love about fall.
The leaves changing, the crisp cool air, hayrides, bonfires, scarves, sweaters, and trips to the pumpkin farm.  The list goes on and on!
But one of our favorite things about fall is the sweet treats!
So, of course we had to share with you one of our favorite yummy fall recipes, 
Faulkner's Fallfetti Popcorn!
This treat is so yummy!  Make a batch for yourself and then make a batch to share with all of your friends and family - trust us, they'll love you for it!
Just follow the simple recipe below!

Faulkner's Fallfetti Popcorn

Ingredients:
Popcorn
Caramel Bits (we use the ones by Kraft that are made for melting)
Candy Corn
Fall Colored M&M's (we LOVE the Pumpkin Spice ones!)
Fall Colored Sprinkles
Pam Butter Spray

Directions:
1.  First, make a nice big bowl of popcorn!  It doesn't matter if you use bag, stove, or air popped popcorn.  Any popcorn will dow.  If you like buttery popcorn, now is the time to give it a good coating of the Pam Butter Spray.
TIP: Divide the popcorn into two bowls.  This makes it easier to stir in the rest of the ingredients.

2.  Now melt your caramel bits.  Follow the instructions on the bag or melt them in 45 second increments, stirring in between, to avoid burning.  Once the caramel is melted, drizzle it over the popcorn as you stir it.  The goal is to get a little bit of caramel on each piece.

3.  Now sprinkle in your M&M's, candy corn, and sprinkles.  Add as much of each as you choose!
Let the caramel cool before serving.

This can be served in bowls like shown above, or it can be bagged to hand out as yummy treats.

Tuesday Treats: Not Your Average Snow Ice Cream

Most of us know the traditional way to make snow ice cream:
8 cups of snow, 1 (14oz) can sweetened condensed milk, and 1 teaspoon vanilla extract all mixed together.

But, if you have five minutes and are looking to switch things up, why not try this recipe?

To make "Not Your Average Snow Ice Cream" you will need:
10 cups of clean snow
1 cup of cream
1/2 cup of sugar
1 teaspoon vanilla
1 tablespoon sugar-free instant vanilla pudding mix

Now follow these directions:
1.  Stir 6 cups of snow and the rest of the ingredients together until they have reached a thick, milk-shake like consistency.
2.  Cover the bowl and set it out in the snow for about fifteen minutes.
3.  Mix in the rest of the snow.  The mixture should now be thick like ice cream and ready to eat!  Top with your chocolate syrup, sprinkles, fruit, etc.

Pumpkin Chocolate Chip Brownies

Remember earlier today when we shared a recipe for Pumpkin Pie Milkshakes? Well, we have the perfect treat to go with it!
Pumpkin Chocolate Chip Brownies

This recipe from Pennies On a Platter is deeeeeelish!
Make a batch and share with everyone you know! 
It's easy - just follow the recipe below.


INGREDIENTS:
1/2 cup pumpkin puree
1 whole egg
2 egg whites
1 tbsp vegetable or canola oil
1 cup flour
1 tsp baking powder
1 tsp unsweetened cocoa powder
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/4 tsp salt
2/3 cup brown sugar, packed
1/2 cup semisweet chocolate chips
INSTRUCTIONS:
1.  Preheat oven to 350˚F.  Line an 11″ x 7″ pan with parchment paper.
2.  In a large bowl, combine pumpkin puree, eggs and oil until smooth.  Set aside.
3.  In a separate medium bowl, mix together the flour, baking powder, spices, salt and brown sugar.  Add to the wet ingredients and mix until thoroughly incorporated.  Stir in the chocolate chips.
4.  Pour into prepared pan and spread evenly.  Bake for 15 – 20 minutes or until passes toothpick test.  Cool completely before cutting.

5.  Enjoy!


Yield: 24 small brownies

Chocolate Chip Pumpkin Spice Bars

Do you like chocolate?
Do you like pumpkin?
Well then, you're in luck because these Chocolate Chip Pumpkin Spice Bars from Recipe Girl are sure to make you smile!

INGREDIENTS:
Batter:
1 3/4 cups unsweetened pumpkin puree
1 cup canola or vegetable oil
4 large eggs
1 1/2 cups granulated white sugar
1/2 cup light brown sugar, packed
1 cup all-purpose flour
1 cup whole-wheat pastry flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
3/4 cup mini- chocolate chips

Frosting:
8 ounces cream cheese, at room temperature
4 Tablespoons butter, at room temperature
2 teaspoons milk
1 teaspoon pure vanilla extract
4 cups powdered sugar, measured then sifted
1/2 cup mini- chocolate chips (for topping)

DIRECTIONS:

1. Prepare batter: Preheat oven to 350°F. Spray 10x15-inch baking pan with nonstick spray.
2. In a large bowl, whisk together pumpkin, oil, eggs and sugars until combined.
3. In a separate bowl, whisk together flours, baking powder, cinnamon, baking soda, salt, ginger and cloves. Toss in mini chocolate chips and stir to combine. Add dry ingredients to the wet and stir until moistened.
4. Pour batter into prepared pan coated with nonstick spray. Bake until the center springs back when lightly pressed in the center- about 25 to 30 minutes. Remove and place on wire rack to cool completely.
5. Prepare frosting: In a large mixing bowl, beat together cream cheese, butter, milk and vanilla. Slowly add the powdered sugar, 1 cup at a time, and mix until smooth. Frost bars and sprinkle with additional mini chocolate chips.

Yields 45 bars

Crockpot Pumpkin Bread


It is easy to do a search for Pumpkin Bread and come up with a variety of recipes.  But did you know that you can make this yummy fall treat using your crockpot?
That's right!
The best part about cooking this delightful treat in your crockpot is that it won't heat up your house on a warm day and it is incredibly moist!

Tuesday Treats: Cowgirl Cookies

Yee-Haw! It's our first Tuesday Treats of 2012!

We wanted to start off the year with something super yummy and these Cowgirl Cookies were the perfect choice!
Not only are they absolutely delicious, but they also make adorable gifts!
To make these Cowgirl Cookies just follow the recipe below...

INGREDIENTS:
1 1/3 cup all purpose flour, spooned into measuring cup & leveled
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup cooking oats
3/4 cup m&ms
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 – 1/2 cup chopped pecans
1 slightly beaten egg
1/2 cup butter (melted slightly in the microwave)
1 teaspoon vanilla
DIRECTIONS:
1.  Stir all the dry ingredients in a large mixing bowl.
2.  Then add egg, butter, and vanilla into dry ingredients.  Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated.
3.  Then roll the cookie dough into 1 1/2 inch balls, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350 degree oven. 
This recipe yields about 26-28 cookies.

Homemade Pumpkin Frozen Yogurt

This time of year there are sweets everywhere! So why not satisfy your sweet tooth with this healthy homemade treat?
Homemade Pumpkin Frozen Yogurt!

Ingredients:
1 cup nonfat vanilla yogurt, strained
1 cup pumpkin puree
1 tablespoons granulated sugar
1 teaspoon pumpkin pie spice

Directions:
Mix ingredients together in a large bowl until completely combined.
Churn the mixture in an ice cream maker for a few minutes until it is a smooth, cool consistency
OR
Place the bowl in the freezer and stir mixture every half hour until it reaches the desired consistency.
